Vegetable soup—-Shortcut Style

I do enjoy soup and salads! Sometimes I will use what I have on hand. I had some coleslaw Mix, tomatoes, onions, celery, and green peppers.  I decided to salute the onions, celery, and green peppers while then add the coleslaw mix( cabbage and carrots). After they became tender I added the tomatoes.  I then added some black beans. I just used what I had on hand. It is a healthy thing to have on hand! You could substitute any type veggie you have.  I just thought I would share!  oops, I did add fresh Basil and some dried Oregano!
